We’ve got local beef ready to go.

  

 Two of our ranch‑raised Angus-Charolais beef calves are finishing out now and available for immediate purchase.


These calves were born, raised, and finished right here on our Texas heritage ranch in Clay County in North Texas. Grass‑fed, grain‑finished, and processed locally in a Texas state inspected facility. No mystery meat, no long-haul feedlot stuff, no international imports — just honest, home‑raised beef. Know where your beef comes from and what’s in it. 


We have quarter, half, and whole beef available. Prices and weights are approximate examples. Final price depends on finished weight and processing customization.


· Quarter beef:  approx. $1,225 for approx.100 lbs of beef. Standard butcher cut with a mix of steaks, roasts and ground beef (no custom requests).  Provides a family of two with beef 2 to 4 times a week for 6 to 9 months. 

· Half beef:  approx. $2,500 for approx. 200 lbs of beef. Custom cuts available.

· Whole beef:  approx. $5,000 for approx. 400 lbs of beef. Custom cuts available.

Hanging weight of the beef is the weight of the animal after the hide, head, hooves and most internal organs have been removed. The hanging weight is typically 60% to 65% of the live weight of the animal. For example, a 1200-pound calf will have a hanging weight of about 750 pounds.

The packaged weight is the actual amount of meat available after removing bones, trimming fat and moisture loss from the dry aging process. This is typically 60% to 65% of the hanging weight. Our 1200-pound calf yields approximately 470 pounds of meat. A half of beef would be approximately 235 pounds of meat and a quarter approximately 115 pounds. A quarter beef typically provides a family of two with beef 2 to 4 times a week for 6 to 9 months. 


  

The price is comprised of:

1. The hanging weight, paid to the rancher (Baldwin Agriland), based on current market pricing. Pricing beef based on hanging weight is the industry standard and ensures a consistent method for customers and ranchers.

2. The processing and any customization fees, paid to the processor (Redneck Ranch Beef Production). 


Based on current market pricing, here are some examples of current estimated total cost. Prices and weights are approximate examples. Final price depends on finished weight and processing customization. 

Quarter beef: approx. $1,250 for approx.100 lbs of beef. Standard butcher cut. 

Half beef: approx. $2,500 for approx. 200 lbs of beef. Custom cuts available.

Whole beef: approx. $5,000 for approx. 400 lbs of beef. Custom cuts available.


  

For a quarter beef, you will receive standard cuts: 

Ground beef – approximately 30-40 % of the meat 

Steaks – ribeye, t-bone, sirloin

Roasts – chuck, rump, sirloin 

For half and full beef, you can customize your cut with the processor with respect to how much you want of each type. Not only will you receive more of all of the cuts in a quarter beef, you will receive cuts such as round steak, arm roasts, brisket, ribs, and chili meat. You can also customize how thick you want your steaks and how much meat per package. 


  

  

We do not ship. Meat is picked up from the processor in Scotland, TX unless prior arrangements are made. 


  

  

  

Contact us to see if we still have beef available and current pricing. The cost of the beef hanging weight is paid to Baldwin Agriland. We take a deposit at the time of order, payable through Zelle. We will then put you in contact with the processor to finalize the processing order. When the order is ready, the remainder of the beef cost is payable to Baldwin Agriland through Zelle and the processing fee is payable directly to the processor at pickup.


  

   

  

As a general rule of thumb, plan on 1 cubic foot per 25–30 lbs of packaged meat, then add 20–25% extra for organization and breathing space. For example, a quarter beef would require approx. 4 to 5 cubic feet, a half beef 6 to 10 cubic feet, and a whole beef 12 to 16 cubic feet.
